Small Changes = Huge Results

Edward Norton narrates this National Geographic special "Strange Days-Plastic Plague" about how our generation is experiencing the fastest global change ever due to plastic. Please please please stop using plastic bags! All plastic bags wind up in the trash and are unable to break down and so many end up in our oceans which just isn't fair to the aquatic life that has been able to live freely, before man screwed everything up, for thousands and thousands of years!

Ted's Birthday

I was fortunate enough to have Ted's birthday off from school... I secretly planned for us (including some of our friends) to have dinner at this awesome Indian place called Monsoon. We walked down from our house, only a 15 minute walk, and had some amazing dinner with friends. There were a few "highlights" of the evening but my favorite was one of Ted's birthday gifts from Wes and Rita. It's called an "Uglydoll" and her name is Fea Bea.
Mind you we are in a nice restaurant and Fea Bea is placed in an empty chair at the table... our food comes and for the last entree to be dropped, our friend Mark points to Fea Bea as the recipient. We all started laughing so hard! It was ridiculous!
Also, there were balloons on the table and Ted moved them to take a picture and one of them hit the chandelier and popped. It was so loud that one of the babies at the next table started crying... Just a typical night out for us.

I'm Home

I have to say that weekend trips across the country are extremely difficult on me!!! I'm so happy that I went but man, I am exhausted! The time change was not on my side being over in Virginia... 3 hours ahead!
My brother's graduation was on Sunday. We woke up at 5:45am (East coast time) which is 2:45am my time. Then we all got dressed, got in the car and made it to meet my brother for breakfast by 8:00am. The weather had been beautiful all day Saturday so we were all hoping that the storm would just go right by us and we would have the graduation outdoors as planned. WRONG!
Right after breakfast, the storm came in full force. We were all in nice dresses and open toe shoes. Thankfully we had plenty of umbrellas but they almost did no good. The wind was blowing so hard that the rain was just drenching all of us to the bone. We proceeded to the football field where they were stuborn about having the ceremony outdoors unless it was lightening. We sat down on our wet seats and were already miserable before the thing even started. At the last minute, they decided to move the ceremony indoors. There were about 4,000 people there and I still can't believe that they had the nerve to make last minute decisions like that instead of just having it in the stinking indoor gym anyways.
We all were trying to get to the gym, which was on the opposite side of the campus, and get out of the rain. When we got to the doors, they were locked. There were thousands of people getting soaked outside and they wouldn't let us in! All of a sudden, I'm not joking, it seemed like the sky fell out. The rain was pounding so hard that one of our umbrellas broke. All of us, including my grandma, were drenched from head to toe. It was awful! They finally opened up the doors and it was like a freaking mosh pit. People were elbowing people, using their umbrellas to get through, and I've never heard such harsh words come out of elderly folks. It was crazy.
On another note, there were only about 1,000-1,500 seats for the 4,000 guests so finding a seat was a battle as well. We scouted out our seats and pounced on them. We were all soaking wet, the air conditioning was on and we were so uncomfortable. They started a little more than an hour late. They finally called Justin's name and we all agreed that we wanted to go home and try to get into dry clothes, take some asprin, and get some food and then come back to meet up with Justin for some dinner. Well, as many people know, plans never seem to go as planned. We thought that the ceremony was going to last 3 hours but instead it only lasted 2. We were almost home when Justin called and said that it was over. We all were so bummed because now we had to ask Justin to drive in the rain all the way home and meet us before I had to go to the airport. We basically had about an hour to see eachother and then I was off.
Next time, no matter what, I'm staying for at least 4 days. This flying in Friday night, spending one full day and then having to stress about flying out on Sunday doesn't work for me!!!
If you've read all of this, I'm sorry for the ranting! It was just a very stressful weekend!!!

My Flight

Well, I made it to muggy ole Virginia Beach. The humidity is almost unbearable but seeing my family makes it worth it! Right after I got here, my mom, brother and I went to a bar/restaurant called C.P. Shuckers (I used to work there when I lived in VA) and had some amazing blackened tuna bites and of course, the stand by, chicken tenders. It was the first time all three of us went out to a bar together. It was pretty cool. At about midnight VA time, my mom headed home and Justin and I decided to hit another bar called Kokomo's and finished the night off with some drinks and dancing.

Today, I'm going to a school luncheon with my brother and get to meet all of his professors and friends. That should be fun!

My Brother Is Graduating... Again

I have a music genius for a brother.

He has been playing instruments since he was in the 5th grade and has always excelled in school. I just found out that he is getting a "full ride" to FSU (Florida State University) to start his Masters in music. This boy is only 23 years old!!! He amazes me!
I'm leaving on Friday to fly out to Virginia for the weekend. It looks like it's going to be raining!

Invitations

Okay, I think I have finally found THE invitation. They have a very vintage feel, are exactly my colors and are simple yet elegant enough!

{recipe} Cheesy Turkey Meatloaf

Happy Wednesday!
I have a great recipe that I would love to share with you... It's evolved into something beautiful!
Ingredients:
1 pound ground turkey, defrosted
1/2C milk
1 piece of bread (any kind will do)
1 egg
1/2 sweet onion, finely diced
3 cloves garlic, chopped
3-4 slices of Monterrey Jack cheese
3-4 dashes of Worcestershire sauce
1/2C ketchup
2 Tbsp brown sugar
Salt and Pepper to taste
butter or oil, for sauteing
Garlic powder
Directions:
  • Preheat oven to 400 degrees F.
  • Saute onions in a tsp of butter or oil. Sprinkle with pepper and garlic powder. Let cool.
  • In a bowl, mix turkey, garlic, onions, worcestershire, salt, pepper, 1 squirt of ketchup.
  • In a small bowl, mix egg, milk and tear up bread and soak it in the milk/egg mixture.
  • Pour into turkey mixture and mix together with hands.
  • Fold in the monterrey jack cheese. I tear each slice into 4 pieces.
  • Transfer into loaf dish.
  • Sprinkle top with garlic powder, salt and pepper.
  • In a small bowl, mix ketchup and brown sugar. Pour on the top of meatloaf.
  • Cover and refrigerate for at least an hour.
  • Cook for 1 hour. Let sit for 10 minutes to let the juices redistribute.

Serve with mashed potatoes and corn. Leftovers are even better! Use mashed potatoes as your spread on the toasted bread and heat up one slice of meatloaf... it's delicious!

A Michaels Find To Remember

I stopped by Michaels Arts & Crafts today and you won't believe what I found!!!

I was looking in the Clearance area, as usual, and saw this incredibly cute cake topper. I looked closer and realized that it was a Kim Anderson. I'm sure you're familiar with her work... anyways, these are collectable items! I'm not kidding, this cake topper was marked down from $54.99 (which is actually cheap according to the price online, $79.99+) to a whopping $9.99!!! I couldn't believe it! So of course I bought it and I'm really looking forward to having it on my dessert table!

Happy Cinco De Mayo

Today turned out to be a beautiful day! I'm going to be creating a May 5th inspired dinner tonight! Mashed potato tacos, rice and black beans, my bomb guacamole and of course some mexican beers... no margaritas, it is a Tuesday ya know.

Weekend Recap

I had such a wonderful weekend!
Saturday, Ted and I woke up and had a great breakfast... well, sorta great! We are trying out all these gluten free products and um, the pancakes are um, interesting. The flavor is fine, it's just the texture that is really odd. Anyways, we finished up breakfast and headed up to Ramona to celebrate our friend Wes' birthday at his mom's house. The weather was warm, but not swimming pool-bathing suit warm (good thing bc I don't think I'm quite "summer ready", ya know!) Well, after the party we came home and ate some delicious grilled chicken street tacos and watched a marathon of Seinfeld!
Then Sunday, we woke up extra early, had some delicious soyrizo tacos for breakfast and decided that we were going to ride our bikes to the Zoo! Let me start off by saying that the ride isn't easy... there's a steady increase almost the entire way there. Last time we attempted to do this, I had an asthma attack, an anxiety attack and pretty much a pity party all at once BUT this time, I made it all the way! Ted was so cute, he was encouraging me the whole way : ) Well, we got to the zoo right after they opened and all the animals were out and about and very active. I took my camera and made a little slideshow of our trip...
